Som tam, or green papaya salad, is the most-consumed dish throughout the Isaan region in Thailand. Papayas were brought to Thailand from the Americas in the late 1700s and are now an essential part of the local diet. Vlogger (and author of our new Thailand From the Source book) Mark Wiens travelled to Ratchathani to find out more about the dish.
